最常用配方

1. 换算:

5克 黄油=4克 油
1 蛋=45克
1 盎司=28.5克

1大勺: 油=10克, 糖=12克, 黄油=10克油
1小勺: 盐=6克, 酵母=4克
1 杯: 面粉=145克, 水=250克, 奶酪cheese=90克, 燕麦片oats=125克, 红糖=250克, wheat germ=100g, 葡萄干sultana=145g, 核桃walnuts=100g, 油=215g, 蜂蜜honey=320g,

self-raising flour = 1 cup all purpose flour with 1 tsp baking powder and 1/4 tsp salt

2. 咸蛋盐水配方: 300毫升水+4.5大勺盐

3. 凉粉:600毫升水烧开 + 180毫升水+50克绿豆淀粉混合物

4. 饺子皮配方: 600克面粉 + 300克水

5. 面条:300克面粉,少于150毫升水,3克盐(可选)

6. 馒头,包子,肉卷配方:

配方一简单传统:
酵母1小勺
面粉650克
水300毫升

配方二美味:
酵母1小勺
面粉600克; 盐1小勺; 奶粉1大勺; 糖1 3/4大勺 (can dump)
油20克
水330毫升

7. 松软面包配方:

酵母2小勺
面粉475克; 盐2小勺; 奶粉3大勺; 糖1 3/4大勺 (can dump)
油36克
水350毫升

8. 椰蓉配方(也有以下四种等重量的配方或许更好吃):

椰丝(或椰粉)100克
糖90克
黄油50克
蛋1个

9. 葡萄牙甜面包(Portugese sweet bread loaf):

2 1/4 小勺酵母
580克面粉
1/2杯糖
1/2小勺盐
1大勺奶粉
47克油
2个鸡蛋
200毫升水
1/2小勺柠檬皮挫

10. 法式甜面包 (Brioche) - 有点太腻:

酵母1 1/4小勺
面粉400克
盐1小勺
糖2 1/2 大勺
黄油120克(或200毫升油)
水170毫升
蛋2个

11. 葡萄干面包:

酵母1 1/2小勺
面粉400克
盐1/2小勺
红糖3 大勺
奶粉2大勺
油20克
水280毫升
葡萄干100克

12. 饽花:

酵母1小勺
面粉500克; 糖4大勺; 奶粉4大勺 (can dump)
水250毫升

13. 葱油饼:

水300毫升
面粉150克
蛋2个
葱花适量

I'm so glad to have found your blog! :) My husband just bought me the same Panasonic bread machine as you have and I love making the asian breads, so am glad to be able to check out your recipes and ideas! Do you find the pizza dough function better to use than the dough function? It just seems much quicker! I will have to try out some of your recipes and tips! :) Thank you! :) (btw I can't read chinese :))

    Yeah I find the pizza dough function the mostly used one. I only used the dough function once or twice and I found I prefer saving time by using the pizza dough function instead. The only difference I've found is the dough function can give you more rised dough while pizza dough function gives you a less rised dough I think. I don't normally prefer too fluffy end results so pizza dough is perfect for me.

    I wrote the Chinese entries so my Chinese friends can check out my stuff but the Chinese contents are simply a collection of the English ones. So you can find all the information in English entries. If I ever have time I'll translate the Chinese contents into English but I don't know when! :)

    Glad you like my blog and have fun with your new bread machine. I believe you'll find it very addictive! Haha!

    Just wondering whether you have tried using your pizza dough function to knead then restart the program again if you want the dough to be further kneaded? I found that even with the dough function it did not knead as much as I wanted it to. Also - can you interrupt the program if you want to see how the dough is progressing?

  4. No I haven't found I need to reknead the doughs but I suppose you can restart the pizza dough function if you need to coz I think the function is simply knead-rise-knead-rise. Look at the manual and I think at the first few pages there's a table explaining what the machine does under each function.

    I always open the top lid to see how the dough is progressing, never interrupted a program. I had to stop a program though because I chose the wrong program...

  7. It's basically plain bun but I added in pandan paste to give it the light green colour and slight flavour!
